Contrary to popular belief, Vanilla is one of the most complex flavors on the planet. If we go back to the 16th Century, it was considered to be one of the most precious and profitable commodities belonging to the Spanish Empire. As an ingredient that was sought after by the most elite people in society, Vanilla was labeled as an exotic and luxurious flavor.

Why Do So Many People Think Vanilla Tastes Boring?

Around 95% of vanilla-based products, including Vanilla Ice Cream are formulated with something called Synthetic Vanillin. This far from tasty ingredient is actually made synthetically for use in commercial, processed foods.

Step 1 – Take a large saucepan and add Whipping Cream, Whole Milk, Salt, and ¾ of the cup of sugar. Heat gently over medium heat while stirring through.

Step 2 – Scrape out the seeds of the Vanilla Bean into the pan, adding the entire bean pod afterward. Make sure that you stir the mixture continuously until all the sugar is completely dissolved. This usually takes between 6-8 minutes.

Note: Make sure that you do not let the mixture boil at any point.

Step 3 – Remove from the heat and leave the mixture to stand for 15 minutes.

Step 4 – Place the remaining sugar and your 6 egg yolks into a bowl and whisk thoroughly. Slowly add in 1 cup of the mixture you made earlier. Then, take your egg mixture and add this back into the pan. Heat again, on a medium setting. Stir continuously for 10 minutes or until the mixture thickens up.

Tip: If you have a thermometer handy, you should expect it to be approximately 160° at this point.

Step 5 – Run your mixture through the strainer into your metal bowl. At this point, you can discard of the vanilla pod.

Step 6 – Take your ice and place it into a large bowl. Then, place the bowl containing the mixture into the bowl of ice. Let it stand, but stir occasionally for approximately 20 minutes. Cover, then chill for 4 hours.

Step 7 – Get your electric ice cream maker ready to use. Pour the mixture into the freezer container and freeze according to your chosen manufacturer guidelines. Once complete, transfer the contents into your container, cover, then freeze.

Note: Times may vary depending on the type of electric ice cream maker.
